Originally from a small town in Ohio, our Executive Chef/Owner Zachary Disch has always had a passion for good food. At such a young age, he polished his culinary skills by learning how to make new foods and working in the wood fired pizza industry. You can say that the idea for Z's Wood Fired Pizza began long ago before the official date established in December 2013.

The adventure started at The Pavilion Food Park on Johns Road in Boerne, Texas. He and co-owner/wife Jodi Disch decided to take a chance in the food truck industry and began a wood fired pizza trailer/food truck named it after their beautiful daughter Zadi. By using a custom made trailer, Z's pizza is able to deliver the quality and taste to satisfy your pizza needs. After being open for a few months, the good people at the Random Beer Garden invited us to be their anchor food trailer on Valentines Day 2014. This opportunity helped propel Z's Wood Fired Pizza as a great place to enjoy a fresh, made to order food and the start of a strong relationship with the owners of the Random Beer Garden. This partnership was a perfect match with Z's providing delicious pizza and Random providing a great craft beer selection.

When our son Zain became a year and a half old, we decide it was time to open our own Brick and Mortar. We found and fell in love with our current location at 118 Old San Antonio Road and decided to call this quaint little house our home. This was our dream and vision for years and it was time to make it become a reality. We put our hearts and souls into our craft, this place and we finally ready to open on Valentine's day 2017.
